Virgin Voyages has announced the introduction of Rojo by Razzle Dazzle, a new Spanish-inspired dining concept set to debut aboard Brilliant Lady, the latest vessel in its fleet.
The launch follows the recent introduction of Lucky Lotus by Razzle Dazzle – a Chinese-inspired restaurant that began service aboard Scarlet Lady in November – and marks the next stage in the cruise line’s ongoing expansion of its onboard culinary offerings.
Chefs Justin Severino and Nate Hobart will lead the new venue. The duo, known for their work at Morcilla, a Spanish-style charcuteria in Pittsburgh, bring a track record of innovation and accolades, including Severino’s four-time nomination by the James Beard Foundation.
“Virgin Voyages set out to be a disruptor from day one, and our culinary programme – with Michelin-chef designed menus and boundary-pushing creativity – was always central to that mission,” said Levi Mezick, Director of Culinary Program Development at Virgin Voyages. “Spanish cuisine and the communal dining traditions complement our commitment to authentic yet innovative experiences for our [passengers].”
Rojo by Razzle Dazzle will feature a menu influenced by Spain’s regional cuisines, with several of Morcilla’s signature dishes making the transition to sea. Among them is the Oxtail Montadito, prepared with braised oxtail, caramelised onion, mahón cheese, and crostini.
During the day, the venue will serve a Spanish-American brunch menu in a casual atmosphere. Dishes include jamón croquettes alongside more traditional brunch items such as açaí bowls, pastries, and frittatas.
In the evening, Rojo will transition to a more elevated service, offering a menu of pintxos, tapas, and larger shared plates intended to reflect the variety and communal spirit of Spanish dining culture.
The beverage programme has been developed in collaboration with Onada Consulting of Barcelona. Drawing inspiration from bars in Barcelona, Madrid, and San Sebastián, the cocktail list incorporates regional ingredients and preparation techniques to maintain an authentic Spanish identity.
Wines include reds from Rioja and Ribera del Duero, as well as Albariños from Rías Baixas. Brunch service will also feature Spanish vermouths, sangrias, sherries, and cava-based spritzes.
The Razzle Dazzle dining space has been reconfigured for the new concept. Interior elements now feature wood accents, deep red-orange tones, and a combination of shared and private seating arrangements, intended to support the communal dining model that underpins the restaurant’s concept.
In addition to Rojo, several other culinary updates are being introduced across the fleet. Extra Virgin, the line’s Italian venue, is expanding its menu to include new dishes such as seafood risotto, roasted monkfish, arancini, and a wider range of pasta selections.
Gunbae, Virgin Voyages’ Korean barbecue restaurant, will add kimbap rolls, bulgogi, and bo ssam – a whole roasted pork dish served with oysters and caviar.Brilliant Lady is due to be delivered this September, and will also introduce seven original entertainment productions. Further updates, including the full Rojo menu, are expected to be released in the coming weeks.
